Easy Slow Cooker Pot Roast

A classic comfort-food dinner that practically cooks itself. Tender beef, potatoes, carrots and onions simmer together in the slow cooker for an easy, hearty meal that’s perfect for busy days or a relaxed Sunday dinner.

Ingredients

3–4 lb chuck roast
1 lb baby potatoes
4 carrots, peeled and cut into chunks
1 medium onion, cut into wedges
3 cloves garlic, minced
2 cups beef broth
1 packet dry onion soup mix
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp black pepper
½ tsp salt

Directions

1. Place the potatoes, carrots and onion in the bottom of the slow cooker.

2. Season the chuck roast with garlic powder, black pepper and salt. Place the roast on top of the vegetables.

3. Sprinkle the dry onion soup mix over the roast. Add the minced garlic, Worcestershire sauce and beef broth.

4. Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours, until the roast is very tender and easily pulls apart with a fork.

5. Remove the roast and vegetables to a serving platter. Spoon some of the cooking juices over the top and serve warm.

Tip

For the most tender pot roast, cook it low and slow. And don’t worry if you have leftovers—it’s even better the next day!

Easy Sheet Pan Chicken & Roasted Vegetables

An easy, colorful dinner with tender chicken and roasted vegetables all cooked together on one pan. It’s perfect for those nights when you want something delicious and homemade without spending the evening in the kitchen.

Ingredients

4 boneless, skinless chicken breasts
1 lb baby potatoes, halved
2 cups broccoli florets
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 small red onion, cut into wedges
3 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp paprika
½ tsp salt
½ tsp black pepper
Fresh lemon, optional for serving

Directions

1. Preheat oven to 425°F and lightly grease a large sheet pan or line it with parchment paper.

2. Place the potatoes on the pan, drizzle with a little olive oil and season lightly. Roast for 10 minutes to give them a head start.

3. Add the chicken, broccoli, bell peppers and red onion to the pan.

4. Drizzle everything with the remaining olive oil. Sprinkle with garlic powder, Italian seasoning, paprika, salt and pepper.

5. Roast for approximately 20–25 minutes, or until the chicken reaches 165°F internally and the vegetables and potatoes are tender. Cooking time can vary depending on the thickness of the chicken.

6. Squeeze a little fresh lemon over everything before serving, if desired.

Tip

Cut the vegetables into similar-size pieces so everything cooks evenly. And line the pan with parchment paper when you want cleanup to be almost as easy as dinner!

Bacon-Wrapped Jalapeño Poppers

These easy bacon-wrapped jalapeño poppers are creamy, cheesy, smoky and just spicy enough. They’re perfect for game day, casual get-togethers, cookouts, or anytime you need an appetizer that disappears fast!

Ingredients

10 fresh jalapeño peppers
8 oz cream cheese, softened
1 cup shredded sharp cheddar cheese
½ tsp garlic powder
½ tsp onion powder
10 slices bacon, cut in half
Optional: chopped green onions or a little smoked paprika

Directions

1. Preheat oven to 400°F. Line a baking sheet with foil or parchment paper.

2. Slice each jalapeño in half lengthwise. Remove the seeds and membranes with a small spoon. For milder poppers, remove them thoroughly; leave a little membrane if you prefer more heat.

3. In a bowl, mix the softened cream cheese, cheddar cheese, garlic powder and onion powder until well combined.

4. Spoon the cheese mixture into each jalapeño half.

5. Wrap each stuffed jalapeño with half a slice of bacon and place it seam-side down on the baking sheet.

6. Bake for approximately 20–25 minutes, or until the bacon is cooked and beginning to crisp and the cheese is hot and bubbly.

7. Let them cool for a few minutes before serving.

Tip

Wear disposable gloves when preparing the jalapeños—or wash your hands very thoroughly afterward—and definitely avoid touching your eyes! For extra-crispy bacon, place the poppers under the broiler for a minute or two at the end, watching them closely.

2 lbs fresh strawberries, sliced
¼ cup granulated sugar
2 cups heavy whipping cream
½ cup powdered sugar
1 tsp vanilla extract
Optional: fresh mint for garnish

Directions

1. Place the sliced strawberries in a bowl and sprinkle with the granulated sugar. Stir gently and let them sit for about 15–20 minutes so they become juicy.

2. In a large bowl, beat the heavy whipping cream, powdered sugar and vanilla until soft peaks form.

3. Place a layer of cake cubes in the bottom of a large glass trifle bowl or individual dessert glasses.

4. Spoon a layer of strawberries and some of their juices over the cake.

5. Add a generous layer of whipped cream.

6. Repeat the layers until the bowl is filled, finishing with whipped cream and fresh strawberries on top.

7. Refrigerate for at least 1 hour before serving.

Tip

This is a wonderful make-ahead dessert. Assemble it a few hours before your guests arrive, refrigerate it, and add a few fresh strawberries and mint leaves on top just before serving.
